US shell eggs broken up 8 percent in August


    U.S. shell eggs broken totaled 196 million dozen during August, up 8 percent from August 2011 and 13 percent above the 172 million broken in July, according to the U.S. Department of Agriculture's latest report.
    Of that number, 151 million pounds were whole eggs, 67.4 million pounds were egg whites and 33.4 million pounds were egg yolks. During calendar year 2012 through August, shell eggs broken totaled 1.405 billion dozen, up 1 percent from the comparable period in 2011. To date, cumulative total edible product from eggs broken in 2012 was 1.82 billion pounds, up 1 percent from 2011, according to the USDA. Of that, 1.09 billion pounds were whole eggs, 484 million pounds were egg whites and 247 million pounds were egg yolks.
