U.S. shell eggs broken totaled 166 million dozen during February, up 7 percent from February 2011 but 3 percent
below the 170 million broken in January, according to the U.S. Department of Agriculture's latest numbers.
In January and February combined, shell eggs broken totaled 336 million dozen, up 3 percent from the comparable period in 2011. To date, cumulative total edible product from eggs broken in 2012 was 438 million pounds, up 4 percent from 2011. Of the product in February, 129 million pounds were whole eggs, 57.43 million pounds were egg whites and 29.31 million pounds were egg yolks. Cumulatively, the edible product for 2012 has broken out to 263.4 million pounds of whole eggs, 115.43 million pounds of egg whites and 59.41 million pounds of egg yolks.
