U.S. shell eggs broken totaled 168 million dozen during December 2011, down 5 percent from December 2010 and 3 percent below the 174 million broken in November 2011, according to the latest U.S. Department of Agriculture report.
During calendar year 2011 through December, shell eggs broken totaled 2.083 billion dozen, up 1 percent from the comparable period in 2010. To date, cumulative total edible product from eggs broken in 2011 was 2.699 billion pounds, up 1 percent from 2010. Of that product, 1.66 billion pounds of it was whole eggs, 687.3 million pounds of it was egg whites and 351.88 million pounds of it was egg yolks, according to the report.
