U.S. shell eggs broken totaled 172 million dozen
during July, down 4 percent from July 2011 and 3 percent below the 179 million
broken in June 2012, according to the U.S. Department of Agriculture's latest report.
Of that number, 135.6 million pounds were whole eggs, 56.1 million pounds
were egg whites and 28.5 million pounds were egg yolks. In January through July,
shell eggs broken totaled 1.209 billion dozen, up slightly from the comparable
period in 2011, according to the USDA. Roughly 938.96 million pounds of that
were whole eggs, 416.5 million pounds were egg whites and 213.1 million pounds
were egg yolks. To date, cumulative total edible product from eggs broken in
2012 was 1.569 billion pounds, up slightly from 2011 numbers.
